The process of making cream involves taking finished syrup to a temperature about 20 degrees over the boiling point of water, then cooling to around 125F and stirring. The art in the process comes from picking the right grade and taste of maple syrup to start, the rate of temperature change during cooling, and the stirring. Maple Cream is made only from maple syrup and contains no dairy or other products.
Its name comes from its smooth consistency, which is similar to peanut butter and easily spreadable. It can be used instead of butter on toast, spread on pancakes, waffles, and French toast, used as a glaze on meats or roasted vegetables, or used as frosting on cakes and pastries.
