What is matcha Matcha is finely ground powder of specially grown and processed green tea leaves. Its a form of green tea thats been enjoyed in China and Japan for hundreds of years. It is special in two aspects of farming and processing: the green tea plants for matcha are shade-grown for three to four weeks before harvest, makes the leaves softer, sweeter, and brighter. After harvest, the tea leaves are quickly steamed, then dried and put into heated ovens for 20 minutes or so. Workers then remove stems, twigs, and other unneeded parts and grind the leaves into powder.
