We used Puya Chile for the base, a sweet fruity Chile used in your mamas tamales. Don't worry though, we didn't forget Sunday BBQ. We put Chipotle Meco, made from late-season ultra-spicy red jalapenos, to add a smoked flavor that pairs well with a variety of foods. From a simple mayonnaise spread to a creamy pasta, we got it right.
