Description
The Cantabrian Anchovy (Engraulis encrasicholus) from the Cantabrian Sea is considered the highest quality anchovy. This exquisite anchovy lacks bones, has a reddish-brown color, and has a texture that is firm and fleshy. Remove from the refrigerator 2 hours prior to serving. Open the can 30 minutes prior to serving to facilitate oxygenation. When ready to serve, grab toothpicks if you're planning to serve them as an hors d'oeuvre, or use a fork to place them on top of your favorite dishes (caesar salad, pizza, pasta, etc.).
