Born of the rugged spirit of the Old West, Bovine & Swine Craft Meats set out to do things a bit differently. Our hand-crafted meats are reminiscent of the local butcher shops of the past, using traditional techniques and high-quality ingredients. Attention is paid to every aspect of the product; from the "Never Ever" meats, sustainable, humane meat sources, and how the ingredients are broken down, to the snap experienced when biting into a snack stick. Using classic and inventive techniques our All-Natural Snack Sticks are hand-crafted in our own USDA-approved facility in Jackson Hole. Bovine & Swine was born out of Chef Joel Tates pursuit to find the very best cured meats around, which led him to visit butcher shops, specialty grocers, and everywhere in between to learn which flavors, techniques, and processes yield the best result. The result of this passion and curiosity was the creation of a Beef Snack Stick that stands above the rest, personifying the people that produce it and where it is made.
