Eden Aduki Beans are soaked overnight and thoroughly cooked with only Japanese Kombu at Eden's certified organic, kosher cannery. A small red bean, Aduki (also known as Adzuki and Azuki) are mildly sweet with dietary fiber, protein, B vitamins, iron, zinc, and magnesium. Easy to digest. Adaptable to any cuisine, aduki are highly regarded in macrobiotics. Hugely popular in Japan, aduki beans are traditionally served on New Years Day as an auspicious act for the coming year. Delicious in soups, dips, spreads, and deserts, aduki beans are versatile and pair well with winter squash, sweet corn, summer vegetables, and whole grain. In 1974 Eden traveled to the Far East to purchased aduki beans. A shipment was transported down the St. Lawrence Seaway, off-loading half in Canada and half in Michigan. Distributed to Eden growers, these beans became seed for aduki bean cultivation in North America.
