Euphrasia officinalis, also known as Eyebright, is a herbaceous annual or biennial plant native to Europe and Asia. It has small, delicate, white or purplish flowers that bloom in the summer, surrounded by hairy green leaves. The plant can grow up to 30 cm tall and has an erect stem. Eyebright has various culinary and decorative uses. One simple recipe that uses Eyebright is a herbal tea. Ingredients: 1 teaspoon of dried Eyebright 1 cup of boiling water Instructions: Put dried Eyebright in a teapot or heatproof jug. Pour boiling water over the Eyebright.
