Tartufo estivo is an Italian term that refers to the summer truffle, also known as Tuber aestivum. Unlike black and white truffles that are harvested in the winter months, the summer truffle is harvested from May to September, hence the name "estivo," which means "summer" in Italian. Tartufo estivo has a dark brown or black exterior and a light brown or cream-colored interior with thin white veins. Its flavor is less pungent and intense than that of black or white truffles, but it still has a distinctive earthy and nutty flavor with a subtle hint of sweetness. Summer truffle sauce is ideal to flavor pasta dishes, risottos, meat, and fish.
