Raw sprouted light sea salt Organic Certified California almonds. Soaked in filtered water with light mineral-rich USA-harvested Redmond sea salt, low temperature dried below 105F to preserve delicate vitamins and enzymes. We have always used organic Italian almonds because they are unpasteurized, but the crop failed. We decided to switch to California certified organic. The flavor is much better without the hard and bitter almonds one finds in Italian and Spanish crop. The downside is that the USDA requires pasteurization but allows them to be called raw because they are lightly steam pasteurized which hits only the outside of the nut while the inside remains fresh. We have tested these almonds ourselves and found 100% germination! They are alive.
