Tekoa split pea soup is your all around traditional split pea and ham soup that grandma used to make. There is not much in this soup, but its those wholesome, quality ingredients that make is to delicious. Directions: In 3 or 4 quart saucepan add 8 cups water, seasoning packet, peas, ham bone, or desired meat, cover. Over medium heat, bring to a boil, cover, reduce temperature to low. Stir occasionally to keep from scorching, simmer for 50 minutes, or until peas are done. Salt and pepper to taste.Cooking Variations:Peas do not require soaking before cooking. Add a pinch of Thyme right before serving. Add one cup of cream or milk for a creamier flavor and texture. Top with sour cream and chives. Can also add Kielbasa, ground turkey or beef. Salt and pepper to taste. Cooking Variations:For vegetarian, prepare without meat. Use 15-oz. vegetable broth and reduce water by two cups. If desired add meat substitute. Makes 10 cups.
