Just Like Mom's Cookies Rolled Organic Barley Flakes is one of the oldest known cereal foods with a sweet nut-like flavor. Organic Barley Flakes are a terrific change from Oat Flakes. Barley Flakes can be eaten hot or cold, and can be used in recipes calling for Oat Flakes for a change of flavor. Barley Flakes may be used in place of oat flakes (or combined with oat flakes) for a chewier result. They may be added to soups.The Barley grain is first dehulled. It is then hydrated (usually through steaming). Next it is gently and briefly heated before passing through a rolling mill and then cooled before packaging. This processing stabilizes the grain. The heating transforms the starches to more simple sugars, making them more easily digested. Barley is lower in fiber than other grains with its vitamin and mineral content kept intact. To Cook: Add 1 cup of Barley Flakes to 2 cups of boiling water. Cover. Reduce heat to simmer about 7 to 10 minutes. Suggestions:1. Add raisins or diced dried fruits to the flakes as they are cooking (about the last 3 to 5 minutes of cooking time).2. For an unusual twist, add cinnamon and chopped nuts.3. Substitute up to 1/2 cup flakes for flour in quick breads.4. Replace up to half of the flour in pancakes with flakes.5. Use flakes instead of bread crumbs in casseroles or as toppings.6. Use for a delightful topping for pies and fruit crisps.7. Use in making delicious granola's. 8. Use in grain burgers, add to hamburgers or meat loaf.9. Use in muffins and cookie recipes
