Hi, I'm Susie and I created these all-natural, high Omega-3 Breakfast Cookies after writing a history of the Omega-3 fatty acid research: The Queen of Fats -- Why Omega-3s were removed from the Western diet and what we can do to replace them (University of California Press, 2006). I wanted to make something that would be a vegetarian, sustainable, and effective way for my family to boost their Omega-3s -- those heart-healthy, fast-acting fats that are vital for every tissue and cell in our body. And I wanted it to be all natural (of course!) and super satisfying and delicious -- something that would keep my daughters (and now grandsons!) going for hours. I didn't know it then, but what I wound up creating is the ultimate convenience food. Susie's Smart Breakfast Cookies are a great breakfast to go -- or anytime snack. (They are also wonderful for lunch along with a cup of soup or yogurt.) Each individually-wrapped cookie has 8 grams of protein and 20 grams of whole grains, as well as the 2 grams of Omega-3s. They are loaded with oatmeal and dried apples and other fruits -- so they will really keep you going for whatever your day brings!
