Every batch is tested to ensure compliance before being released. In the Walker's recipe, wheat flour is replaced by a blend of rice flour, maize flour, and potato starch. The Gluten Free Chocolate Chip Shortbread cookie contains the same butter and sugar content as the regular shortbreads, and as is Walker's custom, they contain no artificial flavorings or colorings.
