Popular in Liguria in the Genoa region of Italy, Trofie is tapered and intertwined in shape, and unique in texture. It pairs best with vegetable sauces, particularly Pesto alla Genovese, however, it also works with cheese-based and tomato-based sauces, too. Barilla Trofie cooks in just 10 minutes. Simply bring water to a boil in a large pot then add the Trofie along with a generous pinch of sea salt to enhance the pasta's flavour. For authentic "al dente" pasta, boil uncovered, stirring occasionally for 10 minutes. For pasta that's more tender, boil for an additional minute.
