Description
Since 1998, Venta del Barón has been produced under the Protected Designation of Origin (PDO) Priego de Córdoba. The PDO Priego de Córdoba is located in the very heart of Andalusia, partly within the Sierras Subbéticas Natural Park, an area characterized by a unique microclimate and a very limited cultivation area of around 30,000 hectares of mostly centennial olive trees. These natural conditions allow the production of olive oils of exceptional character and quality. In the Sierra de Priego, olive pickers begin harvesting early in the season to select the finest green olives at their optimal moment. The olives are cold-pressed less than 15 hours after harvesting, following the strict production standards of the PDO Priego de Córdoba, ensuring that the genuine aroma and freshness of the fruit are preserved. Only the finest first juice is selected, representing approximately 10% of the potential yield obtained through other methods. The oil is then left to rest for about 15 days to naturally decant, resulting in a bright, luminous extra virgin olive oil. Venta del Barón is made from a carefully selected blend of early-harvest Hojiblanca and Picuda olive varieties. It is an extra virgin olive oil with intense fruitiness, featuring grassy notes along with aromas of mint, almond shell, banana, and apple, complemented by hints of tomato and artichoke plants. On the palate, it begins sweet, followed by a light bitterness and a progressive spiciness. The oil is complex, well-balanced, and harmonious in both taste and aroma. This extra virgin olive oil is produced without preservatives or artificial colors and is well suited for a wide range of culinary uses, including garden salads, roasted or grilled vegetables, fish, white and red meats, soups, stews, sauces, and legumes.
