Characterized by its mellow sweetness & aroma of abundantly contained rice koji, white miso has deep connection with the traditional food culture of Kansai region in western Japan. The miso is often used for Ozoni(Miso soup with mochi rice cake & seasonal vegetables), stir fry sauce for seafoods, and pickled sauce for vegetables.

• About the White MisoShiro-Miso (White Miso) refers to sweet rice miso which has been made using rice koji. This White Miso Paste has a high ratio of rice koji to soybeans, with a short maturation period, and a lower salt content which is much lower than other miso. The unique aroma and sweetness of white miso enhances the flavor of the ingredients
• Difference from Common Red MisoShiro-Miso (White Miso) is characterized by its white, light hue, unlike the more common red miso. White Miso often uses rice malt as an ingredient, and its white color is achieved because it is aged for a shorter period of time than most other types of miso
